The cattle ranching business has been with our family since late 1800’s. My great grandfather came to Washington State crossing the Great Plains in a covered wagon, settling here in Washington State. He then started one of the largest cattle ranches for its time and would move his cattle herd across the Snoqualmie mountain trail to market in Seattle on horseback.  Today, it’s a lot easier to raise and move cattle.

The true Wagyu breed is solely raised in Japan. Several areas of Japan are known for the quality of their Wagyu cattle, and ship beef bearing their area names. Some examples are Kobe, Mishimi and Ohmi beef. The United States acquired only a few select animals from Japan back in 1976, before the market was closed and Japan considered the Wagyu breed a national treasure.

My wife and I raise the famous Wagyu beef breed better known as Kobe in America. This is the breed that produces the most expensive beef in the world. We recognize that better than prime beef isn’t a race to the processor, our animals are produced with quality and this takes time, patience’s and attention to provide this for your customers. We chose to use some of the finest genetics to ensure high marbling carcasses. This helps to increase and improves the ratio of monounsaturated fats to saturated fats. We are committed to providing our customers with quality Wagyu animals.

So, today we find ourselves producing that better than prime Wagyu-Kobe beef here in Eastern Washington. You’ll find our ranch located high above the beautiful Lake Roosevelt with rolling grassy fields for our cattle to graze upon.  We chose to raise Wagyu-Kobe for its health benefits. Wagyu cattle produce a cholesterol free fat not like normal beef cattle. Wagyu breed of cattle are genetically predisposed to intense marbling and to produce a high percentage of oleaginous unsaturated fat. Wagyu beef also contains a high concentration of omega-3’s and Omega-6 fatty acid. The Omega’s are essential to your over all health and the wagyu breed contains the highest amounts more than any other food and about 30% more than other beef.

You’ll find that we pride ourselves in providing our customers with the highest purity Wagyu-Kobe beef. We grass feed our animals until they are ready to be finished, then they are fed a 100% vegetarian diet of  natural grain ration with no added hormones or additives along with free choice forages. The majority of our hay is put up ourselves to insure quality in the feed. Our animals are never fed by-products of any kind. Our feeding method helps create that buttery sweetness in the marbling and the velvety fine texture of lean meat that delivers an ultimate eating experience.  Our animals are finished to 28 to 30 months of age. Our animals are fully traceable with bloodlines, pedigrees and ancestry to insure our customers are getting a quality Wagyu beef. When they are processed they are inspected by a USDA inspector in a USDA Plant and allowed to dry age per our customer’s specifications before they are shipped to the restaurant for you dining pleasure.
